South Downs Fairy is an all-natural absinthe made with our home-grown wormwood
and only coloured with natural botanicals, predominantly fresh mint.
It has
been produced with non-absinthe drinkers in mind and doesn’t contain any
liquorish, and slightly less aniseed than certain traditional recipes, giving
you more of a floral, lighter and less bitter flavour that might appeal even to
absinthe newbies, even though it contains all the traditional herbs you’d
expect from old-school absinthe (wormwood, fennel, aniseed as well as smaller
amounts of quite a number of others…)
This product will lose its lush
colour over time (turning olive/drab green) and may also “throw” a bit of
sediment. This is due to its natural
composition and nothing to worry about. Keep it in a completely dark, cool
place to prevent the oxidisation from happening too fast. As the product
matures, you’ll get sweeter notes and a more rounded flavour of it, losing some
of the spring-like flavour that you can taste initially.
Exposure to direct sunlight and warm
temperatures will spoil the product quite quickly.
